Spelt grain is a cereal that has been found by archaeologist in many prehistoric sires and later became popular in Roman times. Like wheat, spelt contains gluten and so produces good breads which are prized for their flavour and natural richness of minerals.
Shipton Mill's wholemeal flour also makes great soda vread and can add flavour to cookies, biscuits and cakes. The wholemeal nature of flour creates a denser texture but your can blend it with white flours too to lighten if required.
