Coconut flour is made from dried coconut meat and is a natural byproduct of coconut milk production.  The dried meat is ground to produce soft, fine powder which is a great gluten free flour for baking. But it is a bit more difficult to work with so when starting to use this flour refer to recipes until you get to understand the textures and effects of this flour on your baking.

Coconut flour is high in protein, fibre and fat but low in carboydrates.
