These little guys are not technically rice, but an aquatic cereal grass native to North America. A sacred food of the indigenous American Indians, it was traditionally collected by hand from the lakes.

Wild rice takes around 45 minutes to cook, but needs only boiling in water or stock until the grains burst to reveal their little white insides.
