Whole millet is a very small grain which like rice, has a natural subtle sweetness. So as with rice, millet may be used in a similar way: for puddings, stews and instead of cous cous. It is an alkaline grain.
Millet can also be ground down to make millet flour which is a popular ingredient in gluten free cooking/baking.
Roast millet in a little oil until lightly brown. Then simmer in water for 20 minutes or until fluffy.
